Out of This World Protein Pancakes

Felt inspired this morning to remix a childhood favorite, and guess what?

These are way. freaking. better. &…
  • Only 2 ingredients
  • gluten/dairy free, low carb/sugar/glycemic index
  • pack a protein punch to power you for hours!

protein JP pancakes

  • 1 scoop (1/3 cup) French Vanilla Juice Plus Complete whole food protein powder
  • 2 free range eggs
  • 1/2 tsp cinnamon

Mix together and dallop into skillet on med-high, greased with butter or coconut oil

I love topping these beauties with fresh berries, grass-fed butter (ie Kerrygold), and a drizzle of real maple syrup!

The protein, antioxidants from the powder and berries, and fructose make these perfect not only for breakfast but pre/ post workout too!

You can use whatever protein powder you have, but I personally only use the Complete because it’s not mega processed chocked with fillers and toxins, it’s organic + non GMO unlike all the whey powders out there, it’s whole food based which is the goal here, to get as close as you can to the real thang. Plus it’s the yummiest I’ve tried (& I admit I’ve tried them all… ya girl loves her protein smoothies!)

  1. I just wanted to say all your posts are really inspiring. You did a video of how to make overnight oats.. i eat it almost every morning now. With either blueberrys or strawberries, i love it. 😊

  2. OMG this is the best idea ever, pancakes are my favorite thing at breakfast but I try not to make them often because of the fact that they are high in carbs and not very nourishing. Also I started using oats to wash my face like you told me you did and I love it! My skin is liking it too! 🙂

Personally my #OneSimpleChange that I am challenging myself is to do is: while studying or doing homework, not fall back to mindlessly eating the munchies and instead substitute it by drinking water. I’ve noticed this is my mindless weakness and focusing on it as a #OneSimpleChange can hopefully help me hold myself accountable for it ! [:
